St. Patrick’s Day

It’s not all green beer and party hats – it’s about the food...

Corned BeefWell, we’re closing in on that day where everywhere Irish eyes are smiling, green beer flows like a gusher and tipsy revelers everywhere need rock solid sustenance. You’ve got to hand it to the Irish – they might be the kings of the one-pot meal that provides just that – rich, hearty food that soaks it all up. So whether you’re hosting a St. Patrick’s Day Party or just getting in the spirit of things, celebrate the luck of the Irish with any of these delicious, St. Paddy’s Day staples. 

Corned Beef and Cabbage

Traditional Irish corned beef takes forever to prepare – as in 5 days to “corn” it, or 10 days if you’re Alton Brown (come on, dude). Feel free to skip that part and purchase a prepared corned beef from your butcher or supermarket, as the above recipe suggests. But follow the rest to a tee and you’ll have a stellar centerpiece for your St. Patrick’s Day feast. The leftovers totally rock, too. Just remember to slice the finished meat across the grain or all that slow cooking will have been in vain.

Shepherd’s Pie

I’ve eaten a lot of Shepherd’s pie in my day – I’m part Irish – and this one comes from Chef Danny Boome who happens to be, as well. While he suggests choosing between either beef or lamb, going with a half and half mixture of both meats yields the most flavorful results. Adding a wad of freshly chopped thyme and rosemary towards the end adds a nice herbaceous kick. Really, comfort food doesn’t get much better than meat and potatoes, does it?

Irish Stew with Stout

Essentially, a slow-cooked lamb shoulder stew simmered in stout, this recipe couldn’t be easier to prepare. Season and sauté the lamb until it it’s golden brown on all sides and then set it aside. Caramelize the veggies, add your stock and herbs then simmer the lot for a couple of hours – game over. Given the minimal time and effort that this stew takes to prepare, this one-pot wonder has no business being as delicious as it is.

So this St. Patrick’s Day, think about tipping your (obviously!) green hat and cranking out one of these tasty entrees. If you’re really on the ball, you’ll make it the day before so you’re not dealing with food prep on the day of the festivities. Plus, it’ll all taste better when the flavors have had a night to mingle. “Erin Go Bragh” (Ireland Forever)!
